Almost Heaven
When it comes to food, simple is best.
Allow me to present my wife’s bean soup recipe.
- Soak beans over night.
- Put the beans in a crock pot.
- Cover with water.
- Add a bay leaf, onion powder, garlic powder, cumin, salt and pepper.
- Throw in ham hock.
- Set to high.
Walk away for roughly 6 to 8 hours. Leave your house so you can come back and smell the porky-beany goodness when you come in. Remove bay leaf and ham hock. (Husband and dog fight over ham hock)
Serve, preferably with a nice hunk of pub bread and English butter.
On a cold and rainy day, this is like a big blanket in a rocking chair by a fire.

Egg & onion sandwich

My favorite sandwich!
The Original:
Brown a chopped onion in butter.
Crack two eggs over it. Break the yolks.
Salt n’ Pepper.
Serve on toasted white bread. (I prefer non-toasted)
The Classic:
Same as above except with chopped up dried beef.
Either Armour chipped beef (the classic) or Knauss dried beef.
The Overdone:
Same as the classic except with a handful of shredded cheddar on top at the end. Cover it with a pot top and throw and ice cube in the pan to steam it.
